Ingredients
10 servings

2 LbsBeef liver

4 lbonions
sliced or chopped

4eggs
boiled

1 tspSalt
Kosher, is best
3 TbsSmaltz
which is rendered chicken fat, or no salt butter

Water
or white wine, to deglaze fry pan

veg oil

3 clovesgarlic
when frying the onions
Instructions
Step 1
Medium heat, fry onions in veg oil until well caramelized, add water or wine as needed to deglaze. Remove onions when well caramelized
Step 2
over medium heat, In the same fry pan add more oil and liver. Cook until thoroughly done.
Step 3
Add onions, liver, salt and smaltz to a food processor, chop to desired consistency.
Step 4
Chop hard boiled and stir into the chopped liver. Form into a loaf. refrigerate and serve chilled
