For Day 9 of our Christmas Countdown, let's make Pizzelle Cookies - classic Italian waffle cookies known for their crisp texture and intricate designs.
Traditionally flavored with anise, these cookies are also perfect with vanilla or lemon zest.
They require a pizzelle iron to create their unique snowflake-like patterns.

Instructions
Step 1
In a large bowl, beat the eggs and sugar until light and fluffy.
Step 2
Add the cooled melted butter and vanilla (or anise) extract. Mix well.

Sift in the flour and baking powder, mixing to form a smooth batter.

Heat your pizzelle iron and lightly coat with non-stick spray or brush with oil.
Step 5
Drop about a tablespoon of batter onto the center of each pattern in the iron.
Step 6
Close the lid and cook for about 30-60 seconds, or until golden.
Step 7
Carefully remove the pizzelle and cool on a wire rack. They will crisp as they cool.
Step 8
Dust with powdered sugar before serving.
