This stunning Christmassy Chocolate Yule log is so easy to make you won’t believe it . It’s basically a super soft chocolate Swiss roll filled with fluffy fresh cream and some chocolate frosting on top !

Instructions
Swissroll
Step 1
Separate the eggs then use an electric mixer to beat the yolks until pale and fluffy . Slowly add the sugar and beat two more minutes until combined


Step 2
Sift the flour cocoa powder and (optional)a pinch of salt into the yolks then mix until combined . Beat the egg whites until stiff peaks then mix one large spoon full of the egg white into the yolk mixture to loosen the batter . Now pour that batter into the rest of the egg whites and keep folding gently until you can’t see anymore white


Step 3
Spread the batter onto a lined Swiss roll tray and bake at 175 c 360 f for 20 minutes then dust powdered sugar onto a clean tea towel and when the Swiss-roll is fresh out of the oven flip it onto the powdered sugar and while warm roll the Swiss-Roll length ways and let it sit like that to keep the shape
Step 4
Whip the cream and powdered sugar until stiff and when the Swiss roll is cooled unroll and spread the cream all over the base then roll up again

Chocolate Frosting
Step 5
Beat the butter with an electric whisk until fluffy then add cocoa powder and powdered sugar and beat until combined . Add a table spoon of milk to loosen the frosting so it’s easier to spread



Step 6
Spread the frosting all over the Swiss -Roll then cut a small piece diagonally from the end and put it on the side so it looks like a log . Use a fork to make a wood like pattern on it then garnish with some
Red fruit like cranberries or currants and some mint leaves
