Instructions
Step 1
Remove any large chunks of fat around the cut of beef, then cover the meat with coarse salt and steak seasoning.
Step 2
Heat up the oil and sear all sides of the beef until a golden crust develops all around it. Remove and set the meat aside.
Step 3
Add the thin sliced onions into the pot and mix them around to collect all the caramelized bits of seasoning at the bottom of the pot. Add a splash of water if it is too crusted to the bottom of the pan to capture all the bits of flavor with the onion.
Step 4
Once the onions begin to become translucent, add the tomato paste and mix it together.
Step 5
Add the beef back into the pot and mix the onions around with the meat.
Step 6
Add beef stock (or stock of choice) to cover the meat in the pot. Mix the stock around with the meat to scrape off onions from the bottom of the pan.
Step 7
Cover the pot and set it to pressure cook on high for 2 hours on high.
Step 8
Once done, open the lid and use a large spoon to scoop out oils and fats from the top of the liquid. Discard those fats (unless you like it you can keep it in there).
Step 9
Take a scoop of the sauce out and put it in a heat safe cup or bowl. Add the corn starch to this and whisk it together until no clumps are left (fully dissolved), then pour this mixture into the pot.
Step 10
Add the Italian dressing into the pot and mix together.
Step 11
Turn on the pot to sautee mode to simmer the sauce to thicken it into a nice gravy. (About 15 minutes).
Step 12
Serve with your favorite side. I personally love balsamic vinegar glazed brussel sprouts or garlic mashed potatoes 😋.
