Instructions
Step 1
Cream the butter in a large mixing bowl and gradually add the granulated sugar.
Step 2
Separate the hard boiled eggs and strain the yolks through a fine mesh sieve into the mixture.
Step 3
Add the sifted flour and raw egg yolks to the mixture. Note: Save the egg whites as they will be used in decorating the cookies. You may want to store the egg whites in the fridge while the dough chills (see step 5).
Step 4
Knead with hands until thoroughly blended and dough is easy to handle. Add brandy and continue to knead.
Step 5
Wrap in plastic wrap and chill for several hours, until firm and easy to work with.
Step 6
Remove dough and egg whites from fridge, preheat oven to 350 degrees, and prepare baking sheets by lightly flouring.
Step 7
Roll out the dough as thin as possible and cut with cookie cutters. Tip: You may find it easier to work in small batches when rolling out the dough.
Step 8
Brush cookies with slightly beaten egg whites and sprinkle with sanding sugar.
Step 9
Bake for 10-15 minutes. Let cool on cooling rack.
