For the Caramel Icing
Instructions
Step 1
Preheat oven to 350 degrees
Step 2
Grease a 9 to 10 inch tube pan or spring pan
Step 3
In the work bowl of a stand mixer use the whisk attachment on medium speed, mix the applesauce with the baking soda
Step 4
Then add the sugar, cocoa powder, spices and the melted butter
Step 5
Add the flour, golden raisins and the nuts
Step 6
Put your batter into your pan
Step 7
Bake uncovered for 45 mins to 50 mins
Step 8
When done let the pan cool for 30 minutes
Step 9
Then remove the cake from the pan and let cool for a additional 10 to 15 minutes on a wire rack
Caramel Icing
Step 10
Combine brown sugar, cream and butter in a saucepan
Step 11
Heat at medium on stove
Step 12
Bring to boil
Step 13
Stir constantly for 2 1/2 minutes then remove from heat
Step 14
Add the powder sugar
Step 15
Beat until smooth with hand mixer
Step 16
Then frost the cake
