Instructions
Step 1
In a small saucepan melt 1 stick salted butter until foamy
Step 2
then add 1/4 cup flour and stir until light brown
Step 3
then add onion, salt and pepper then whisk in 2 cups of milk; stir until it boils then put on low heat for 5 minutes
Step 4
just before serving stir in the cold spinach and cook on low heat for five minutes
