Cinnamon Roll Cake
Cinnamon roll cake 🤎
The softest cinnamon spiced sponge soaked in a sweet cinnamon glaze, layered with an incredible buttery cinnamon frosting. It’s like a cinnamon roll disguised as a cake!

Cinnamon Sponge
360g self rising flour
1 tsp baking powder
1/2 tsp bicarbonate soda
2 tsp sweet cinnamon
200g sugar
360ml dairy free milk
1 tsp apple cider vinegar
100g dairy free yogurt
100g light olive oil
Cinnamon Sugar Glaze
5 tbsp powdered sugar
2 tbsp light brown sugar
1 tbsp cinnamon
2 tbsp water
Cinnamon frosting:
220g dairy free butter, softened to room temperature
420g powdered sugar
1 tbsp ground sweet cinnamon
2 tbsp dairy free milk

Ingredients

Cinnamon Sponge
360gself rising flour
1 tspbaking powder
½ tspbicarbonate soda
2 tspcinnamon
200gsugar
360mldairy free milk
1 tspapple cider vinegar
100gdairy free yogurt
100glight olive oil

Cinnamon Frosting
Instructions
Step 1
Preheat the oven to 170 C Fan.
Step 2
Line 3 round cake tins (6 inch).
Step 3
Mix together milk and vinegar - set aside to thicken.
Step 4
Mix in the remaining wet ingredients.
Step 5
Sift in the dry ingredients.
Step 6
Pour the mixture into the tins.
Step 7
Bake for 20-30 mins, or until cooked through.
Step 8
Leave to cool before levelling off the cake.
Step 9
Next make the cinnamon sugar glaze by combining all of the ingredients.
Step 10
Once the cakes have cooled pour the glaze onto the sponge and let it soak in for 10 minutes.
Step 11
With a hand mixer or paddle attachment on your stand mixer, cream the butter on medium-high until it’s creamy and light in colour.
Step 12
With the mixer on low, add the powdered sugar bit by bit, scraping down the sides of the bowl after each addition. Add the cinnamon and milk. Mix until combined.
Step 13
Assemble the cake by layering the sponge with the cinnamon frosting.
