Almond & Cinnamon bread ✨
This almond and cinnamon bread is one of the most delicious breads you will ever make! It’s so fluffy, moist and rich in flavour!
Cake batter:
2 eggs
160 g butter
170 g sugar
180 g buttermilk
240 g all purpose flour
1,5 tsp bakingpowder
1 tsp cinnamon
1/2 tsp salt
Topping:
100 g almonds
Optional: 20 g honey drizzled on top
Almond paste:
Combine the following ingrediens:
50 g almond butter
70 g brown sugar
50 g softened butter
50 g finely chopped almonds
1 tbsp cinnamon
Instructions:
1. Preheat the oven to 180°C and prepare a loaf pan with baking paper.
2. Cream butter with sugar on high speed for 5-6 minutes. Add in the eggs and beat for an additional minute. Add in half of the buttermilk and mix again.
3. Sift the flour, cinnamon and baking powder into the batter and fold, before it’s all incooporated, add the remaining of the buttermilk.
4. Add 1/3 of the batter into the loaf pan and add in 1/3 of the almond paste. Repeat the process 2 more times and add almonds on top.
5. Bake the bread for around 45-50 minutes and let it cool down completely.
6. Optional: Dust with powdered sugar.
