Easy Malt Loaf
This was one of the first recipes I ever learnt to cook...I couldn't actually believe that you could make a cake from cereal and a cup of tea - I still can't!
This is so easy. A treat to make on a weekend afternoon when you just fancy something sweet.

Makes a loaf
100g bran flakes or All Bran
A mug of black tea
200g self raising flour
200g light brown sugar
200g mixed fruit
1 tbsp treacle
1 tsp baking powder
1 egg beaten
Place the teabag in a mug and pour over boiling water. Leave for 20 minutes, before removing the teabag
Heat the oven to 180C
Add the bran flakes to a bowl and pour over the tea. Give them a stir and set aside.
In a separate bowl add the flour, sugar, treacle, mixed fruit, baking powder and beaten egg.
Add the soaked bran flakes along with any excess tea.
Give it a really good stir until you have a thick cake batter.
Tip into a lined or greased baking tin and bake in the oven for 50 minutes or until cooked through. Slide a knife into the centre and if it comes out clean it's cooked.
Leave to cool in the tin for 15 minutes, before placing it on a cooling rack. Cut into slices when still warm.
