Instructions

Step 1
Add the cucumber, tomato, onion, and olives to a medium bowl.

Add vinegar, and toss gently to combine.
Step 3
Add salt and pepper to taste.
Step 4
Adjust ingredients to taste (add more of what you like), and add fresh herbs if using.(You can use any herbs you like, fresh basil and parsley is tasty in this dish. A little fresh dill is also lovely.)
Step 5
Serve right away, or keep in the fridge for up to 3 hours before serving.
Step 6
Serve with your favorite meat of choice and fruit for dessert!
