1 cuptapioca flour
1 cupmillet flour
1 cuppotato starch
1 Tbsppsyllium husk
3 tspsea salt
11 ozbutter

Instructions
Step 1
Preheat oven 375. In a stand mixer is a paddle or mixed by hand, mix first 6 dry ingredients, then add cut pieces of very cold butter while mixing but don’t over mix move quickly and add very cold water just until dough forms. Wrap dough in plastic wrap and set in refrigerator. In the meantime, add spinach, chopped onion to a large bowl. Melt 3 ounces of butter and set aside. To a separate bowl mix, room temp cream cheese, & all the spices. Add cream cheese mixture to spinach and mix. Beat eggs and add to mixture as well as the feta and stir. Roll out your chilled dough on a floured surface and cut a little more than half, save the smaller piece and place back in the fridge. Roll out dough in the shape of your sheet pan. Place dough on parchment lined sheet pan and add the filling on to the dough. Roll out your second piece onto a flowered surface and top. Crimp sides and spray with avocado oil spray and bake for about 40 to 50 minutes or until desired golden Brown. Brush with butter or avocado oil spray. Allowed to cool about 20 minutes with a large knife cut into squares and enjoy! I like to drizzle with a very good olive oil before serving. Stores well in the fridge and reheats well in the oven.
