Koulourakia (Greek Easter Biscuits)

Traditional Greek Easter biscuits - can be hand shaped in to twists, braids or figure eights.
Typically flavoured with mahlepi, vanilla, citrus zest or even mastic. I like to use Mahlepi (you can find this at any European grocer) if you don’t have access to this you can replace it with 1tbsp Vanilla extract.

1. Preheat oven to 160 degrees fan forced.

2. Using a stand mix or hand held mixer, cream butter with castor sugar for about 5-10 mins until light and fluffy. Occasionally scraping the sides and bottom of the bowl every few mins to make ensure there is no butter left behind at the bottom of the bowl.

2. Once fluffy, turn speed down to low and slowly drizzle in the oil until combined. (It may look a little split at this stage but just trust the process.

3. Once the oil is thoroughly mixed in add in eggs one at a time. Keep the mixture on low speed until combined then add in the Mahlepi

5. Transfer mixture to a large mixing bowl. Add Self Raising Flour one cup at a time. I like to use my hands for this step. You can also use a wooden spoon.

6. Cover and put somewhere cool and dark to rest for an hour

7. Meanwhile whisk egg yolks and milk together to make your egg wash

7. Shape the biscuits in whatever shape you like, typically we braid or make a figure eight with small chords of dough. If the dough is breaking add a little flour.

8. Brush the biscuits with egg wash and sprinkle with sesame seeds.

9. Bake 25-30 mins depending on your oven, you want them to be golden brown.

10. Enjoy with Tea and coffee (I like to smash them up on top of some vanilla ice cream)
