Instructions

Step 1
Preheat oven to 350°F. -- Convection oven to 300°F.

CCP: Wash & sanitize hands & prep area. Wear gloves & discard per facility HACCP guidelines.

CCP: Inspect eggs. Discard if cracked or dirty.
Step 4
1. Bring water to a boil; remove boiling water from heat and add oatmeal. Let sit 20 minutes.

2. Combine margarine, brown sugar, and granulated sugar in mixer bowl on low speed. Add lightly beaten eggs and blend well. Add soaked oatmeal; mix until blended.

3. Combine cinnamon, baking soda, salt, and flour. Add to batter and mix 4 minutes on medium speed; pour into steam table pans sprayed with nonstick cooking spray.

4. Bake 30 - 35 minutes or until cake center springs back when touched lightly or cake tester or toothpick inserted near the center of the cake comes out clean. Frost while warm.

5. Place margarine (2nd listed) in top of double boiler over simmering water. Let melt.

6. Add brown sugar (2nd listed), milk, and vanilla. Cook and stir 5 - 6 minutes until hot and bubbly. Spread over warm cake. Let cool. Once cooled, cover, label & date.

To serve: Cut each 12 x 20 x 2" pan 4 x 8 for 32 servings.

Each serving = 3" x 2-1/2".
