Step 1
Coarsely chop ginger with skin on, place in food processor. Process unit coarsely ground

Add sugar, vanilla bean pods, ground ginger, orange zest and processed ginger root to sous vide container

Step 3
Add brandy, water, sugar and vanilla bean paste to blender. Blend for 30 sec. to 1 min

Step 4
Add blended brandy mixture to sous vide container. Sous vide at 140 degrees for 2-3 hours. After heating pull from water bath and run sous vide container under cold water. Stain into containers.
