Instructions

Step 1
Coarsely chop ginger with skin on, place in food processor. Process unit coarsely ground. Scrape vanilla beans seeds from pods.

Add vanilla bean pods, ground ginger, and processed ginger root to sous vide container

Add brandy, Orange zest strips, and vanilla bean paste to blender. Blend for 30 sec. to 1 min

Step 4
Add blended brandy mixture to sous vide container. Sous vide at 140 degrees for 2-3 hours. After heating pull from water bath and run sous vide container under cold water.
Step 5
Make simple syrup. Combine sugar and water in a small sauce pan. Heat over medium high until sugar is dissolved. Do not boil. Reduce water amount if using orange juice from zested oranges.
