Green Chile Chicken
This meal comes together in under 30 minutes and is absolutely delicious! My husband had no clue it was packed with veggies. 😉🙌🏼
RECIPE - Makes 5 cups
INGREDIENTS:
1 rotisserie chicken or 3 cups of cooked, shredded chicken
1 cup heavy cream
3 oz softened cream cheese
4.5 oz can of diced green chiles
1 jalapeno, diced
10 oz bag of cauliflower vegetable medley, steamed in bag
1 & 1/2 cups pepper jack cheese, divided
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
DIRECTIONS:
1. Preheat oven to 400 degrees Fahrenheit.
2. Shred the chicken and add it to a large bowl.
3. Add in the cream cheese, heavy cream, green chiles, steamed vegetable medley, spices and 3/4 cup of shredded pepper Jack cheese.
4. Stir to combine and then pour into a greased 9x13 dish or casserole dish.
5. Top with the remaining cheese and bake for 20 minutes or until slightly browned and bubbly.
