Instructions

Step 1
Begin by setting up a double boiler. Fill a small pot with water and bring it to a simmer over medium heat.
Step 2
In a glass or metal mixing bowl, combine the egg whites and white sugar.
Step 3
Place the mixing bowl over the pot of simmering water, creating a double boiler, and whisk the mixture constantly until the sugar fully dissolves. This should take about 5 minutes. It’s crucial to ensure that the sugar dissolves completely to achieve the desired texture.
Step 4
Once the sugar has dissolved and the mixture reaches 160°F, transfer it to the bowl of a stand mixer fitted with a whisk attachment.
Step 5
Beat the mixture on medium speed until stiff peaks form, approximately 5 minutes.
Step 6
Gradually add the marshmallow fluff to the mixture, 1-2 teaspoons at a time, followed by the vanilla extract. Continue to beat on high speed until stiff peaks form again, about 3 minutes.
Step 7
Your Marshmallow Frosting is now ready to use!
