Step 1
Whisk together the milk, sugar, egg, and salt in a large (3-quart) saucepan over medium heat. When the mixture begins to steam (which should be at around 160 degrees F), add the rice and reduce the heat to medium/low. Let the mixture reach a very low simmer, but don’t let it boil (it should be around 190 degrees F).
Step 2
Cook for 45 to 50 minutes, stirring often, until the pudding thickens and reduces to around 2½ cups.
Step 3
Turn off the heat, add the vanilla, and let the pudding sit for 10 minutes. Transfer it to a covered container and chill it for at least 2 hours before eating. The pudding will thicken more when completely chilled.
