Has anyone tried the cauliflower hash brown. I have never eaten cauliflower before, I always refused it. But baby! This is amazing. I substituted the mozzarella cheese for Parmesan cheese and it was excellent. Recipe included.
Pre heat oven to 400 degrees
I pack of cauliflower rice, sautéed and seasoned to your taste. 1 cup blended cottage cheese (the recipe said full fat but I used 1.5%) 1/4 cup Parmesan cheese (the recipe says mozzarella cheese) Combine everything together. I placed mine in well greased cupcake pans and baked for 30 min. Yummy
