Ingredients

1white onion
large, diced

5cloves garlic
minced

1 lbground beef

1 lbchorizo

1can fire roasted tomatoes
big

1can tomato sauce
big

1can crushed tomatoes
big

0.25can tomato paste

1can diced tomatoes with habaneros
small

1dried bay leaf

2 Tbsppaprika

2 Tbspcumin
divided

1 Tbspchili powder

1 Tbspcinnamon

2 Tbspworcester sauce
to taste

Instructions
Step 1
In a large pot on medium heat, add a drizzle of olive oil. Add the diced onion and 1 tbsp of cumin, stirring occasionally until glistening, about 7 minutes. Add garlic and stir for another 2 to 3 minutes.




Step 2
Add the cans of tomatoes and stir until well incorporated. Bring the heat to medium low.




Step 3
At the same time in a separate pan, season the ground beef with salt and pepper and cook just until there's no more pink. Strain grease and set aside in a separate bowl. Cook the chorizo in the pan until just done. Strain grease and add to the bowl.




Step 4
Add the meat to the sauce, turning the heat up to medium high. Add paprika, the rest of the cumin, the chili powder, the cinnamon, salt and pepper, then stir well. Let sit on medium high heat until lightly bubbling, about 5 to 7 minutes.





Step 5
Stir well, add the bay leaf and worcester sauce, and then partially cover the pot. Turn the heat down to low. Let simmer for 45 minutes, stirring occasionally.


Step 6
Remove lid and taste, adjusting flavors as needed. Serve and enjoy.
