add beef broth, bay leaf, Worcestershire sauce, and thyme to slow cooker

Heat cast iron skillet on medium high with olive oil

Season beef roast with salt, pepper, garlic powder, and onion powder

Sear roast on both sides for 2-3 minutes. Transfer to slow cooker.

Add butter and onions to skillet. Reduce heat to medium and sauté for 2-3 minutes.

Add sliced garlic to onions and continue cooking for 1-2 minutes. Add red wine and let simmer until reduced by half.

Transfer sautéed onions to the slow cooker. Cook on low for 6-8 hours.

Remove beef from slow cooker. Strain juice for dipping and set aside onions.

Slice the beef and add 1/4 - 1/2 cup au jus

Slice the rolls. Butter both sides and sprinkle with garlic powder. Place on baking sheet.

Toast buns for 10 minutes.

Place the sliced beef onto each roll. Top with sautéed onions and 2-3 slices of provolone cheese.
