Step 1
Heat oven to 375°. Bake sweet potatoes until very tender remove and cool. Reduce heat to 350°.

When potatoes are cool enough to handle cut them and have a scoop of the flesh and mash until smooth. You should have about 4 cups using a hand, mixer mix and brown sugar, orange juice, heavy cream, butter, vanilla, and salt place casserole dish
