Ingredients

3 cupsrice
cooked, leftover
2 x 12 ouncefrozen broccoli
packages
2 x 10.5 ouncecream of chicken soup
cans
2 cupschicken broth
4 handfulscheese
grated, such as sharp cheddar, Colby Jack, or whatever you like best
¼ cupsalted butter
cold, cut into pieces
2 tablespoonsHouse Seasoning Blend
or Juke Joint seasoning
1 ½ cupsPotato Chips
crushed
1 tablespoondried parsley
1 teaspoongarlic powder
1 teaspoononion powder
Instructions
Step 1
Make your rice and set it aside, covered, to keep warm. (If you're using leftover rice, microwave it in a bowl, covered with plastic wrap, until warm, about 40 seconds on high.)
Step 2
Microwave the broccoli according to the package instructions, and then cook it about I minute longer so it's good and mushy, like my daddy liked his. You need it to fall apart in the casserole! Let cool about a minute before draining so you avoid a facial steam.
Step 3
Preheat the oven to 375°F. Lightly grease a 9 × 13-inch casserole dish or large cast-iron skillet with cooking spray.
Step 4
Combine the warm rice, broccoli, chicken soup, chicken broth, and 3 handfuls (about 3 cups) of the cheese in a large bowl and stir until nice and creamy. Add the seasoning and ¼ cup of the cold butter ('cuz that's gonna melt while this is cooking and make it all sopped up and good, hunny!). Stir well.
Step 5
Pour the mixture in the prepared pan and then top with the remaining 1 handful cheese.
Step 6
Bake until hot all the way through and the cheese is bubbly on top, 25 to 30 minutes.
Step 7
Remove from the oven and let rest for 10 minutes.
Step 8
make the topping: melt the remaining 1 tablespoon butter in a small skillet over medium heat. Reduce the heat to medium-low, add the potato chip crumbs, parsley, and garlic and onion powders. Cook, stirring, until the mixture is lightly toasted and fragrant, 3 to 5 minutes.
Step 9
Sprinkle the potato chip mixture evenly over the hot casserole and dig in!
