Instructions

Step 1
Preheat Oven: Set to 350°F (175°C). Grease an 8x8-inch pan.
Step 2
Crust: Mix gingersnap crumbs with melted butter and press firmly into the bottom of the pan.
Step 3
Cheesecake Layer: Beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing until just combined. Stir in vanilla and spices. Pour over the crust.
Step 4
Bake: Bake for 25–30 minutes or until the center is set. Cool at room temperature, then refrigerate for at least 2 hours before slicing.
