Lemon Lime Marshmallow Sugar Cookies can be made soft or crispy. We added a optional Key Lime Pie Icing.

Ingredients
12 servings
1 ½ cupall purpose flour
½ teaspoonbaking soda
½ teaspoonsea salt
¼ cupmalted milk powder
½ cupunsalted butter
room temperature
¼ cupgranulated sugar
¼ cupbrown sugar
1egg
large
½ teaspoonlemon extract
2 ½ tablespoonskey lime juice
½ cupmarshmallows
For the Icing
Instructions
Step 1
Line a baking sheet with a nonstick baking mat or parchment paper.
Step 2
In a small bowl, add the flour, baking soda, malted milk, salt and mix together.
Step 3
In another bowl, add the butter and sugar and mix until the texture is smooth. Add in the egg, lemon extract, lime juice and mix until combined.
Step 4
Add in the dry ingredients into the wet ingredients and mix until well combined.
Step 5
Add in the marshmallows and fold until mixed in. (I recommend using the small marshmallows. We had the bigger ones and cut them up.)
Step 6
Place the cookie dough 1 1/2 tablespoon at a time on your baking sheet. You should have 12 in total.
Step 7
Refrigerate the 12 cookies in the fridge for 30 minutes.
Step 8
Preheat oven to 375ºF.
Step 9
After 30 minutes remove the cookies from the fridge and roll into balls. Place into the oven (We bake 6 at a time )
Step 10
Bake for 7 to 8 minutes if you want soft. If you want crispy bake until slightly golden around the edges. Maybe 10 minutes.
Step 11
Once the cookies are done baking set aside and allow to cool.
Step 12
Store in an airtight container at room temperature.
For the Icing
Step 13
Combine the sugar, cream and butter in a heavy saucepan over medium heat.
Step 14
Bring to a boil. Cook for 2 minutes making sure to stir constantly.
Step 15
Remove from the heat and add the confectioners sugar and mix in your key lime juice.
Step 16
Using a power hand mixer, beat at medium speed until smooth.
Step 17
Ice the cookies to your liking. Enjoy!
