Ingredients

1white onion
1green bell pepper
1 stalkcelery
1jalapeño
Garlic
as much as your heart tells you to
1Can Dark Red Kidney Beans
drained and rinsed
1can light red kidney beans
drained and rinsed
1 cancannellini beans
drained and rinsed
3 canstomatoes with chili spices
with the juices
1 packageMexican crumbles
2 tspchili powder
2 tspground cumin
avocado
cheese
sour cream
Instructions
Step 1
Saute onion, bell pepper, celery, jalapeño, and garlic.
Step 2
Once the onion is translucent, add the tomatoes, beans, and plant-based crumbles as well as the spices. You can also add in 1/4 bottle of Cholula hot sauce here.
Step 3
Mix well, warm through, then cook in a slow cooker for 6 hours on low or 3 hours on high.
