Caramel Filling
Instructions
Step 1
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2
In a bowl, mashed the banana. Add browned butter, sugar and brown sugar until smooth.
Step 3
Add the eggs, and vanilla extract to the butter mixture. Mix until well combined.
Step 4
Mix together the flour, baking soda and salt. Mix until just combined.
Step 5
Fold in the chocolate chips into the cookie dough.
Step 6
Chill the dough for 15-20 minutes to let it set before scooping.
Step 7
For the caramel filling: Heat granulated sugar and water over medium-high heat, stirring until the sugar dissolves.
Step 8
Let it cook until it turns into a deep amber color.
Step 9
Turn off the heat and carefully add the heavy cream, stirring constantly. The mixture will bubble vigorously, so be cautious.
Step 10
Stir in the butter and sea salt until the caramel sauce is smooth and well combined. Set it aside to cool.
Step 11
Scoop the dough and make a dent to fill the toffee or caramel sauce.
Step 12
Place onto the prepared baking sheet.
Step 13
Chill for at least 30 minutes or overnight before baking.
Step 14
Bake the cookies in the preheated oven for about 12-15 minutes or until the edges are golden brown. The centers should still be slightly soft.
Step 15
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
