Chocolate Weetabix Banana Loaf

Instructions

Step 1
Peel 2 very ripe bananas, set aside a few slices of banana for the topping, then add the rest to a large bowl & mash with a fork.
Step 2
Add 1 large egg, 150ml milk & 1 tsp vanilla extract. Mix well.
Step 3
Crumble 4 chocolate weetabix and add to the bowl with 125g self raising flour. Mix until combined.
Step 4
Stir in 50g chocolate chips.
Step 5
Grease or line a loaf tin then spoon in the batter. Top with the banana slices & a few extra chocolate chips.
Step 6
Either air fry at 170C for 25-30 mins (if you have a bake setting on your air fryer use this, otherwise the regular air fryer setting is fine) OR oven bake at 180C fan/200C for 30-35 mins.
Step 7
Carefully remove from the tin and either slice & serve immediately (it's particularly good served warm) or allow to cool completely on a wire rack before storing in an airtight container. Enjoy!
