Instructions
Step 1
in a large mixing bowl, beat together the butter, muscovado sugar, granulated sugar, egg, plain flour and bicarbonate of soda to make a firm dough. Add the chocolate chips or chunks and beat again until well incorporated.
Step 2
Using your hands, break off golf ball-sized pieces of the dough and roll them into balls. Continue until all the dough is used up. If you do not want to cook all the cookies now, you can transfer a portion to the freezer to cook at a later date.
Step 3
You can cook the cookies in a large silicone mould or on a sheet of baking paper. Either way, transfer the cookie balls to the air fryer, spacing them out so that they can spread during cooking and bake for 10 to 12 minutes at 180°C, or until golden but still fairly soft. They will firm up as they cool down. Depending on how many cookies you are cooking off and the size of your air fryer, you may need to do this in several batches.
Step 4
Leave to cool slightly, then serve your air fryer cookie bites still slightly warm or cooled.
