Ingredients
4 servings
½ cupOnions
grated
3garlic cloves
minced
2 Tbsbutter
2 Tbsolive oil
2 Tbsconcentrated tomato paste
1 tspmarjoram
1 ½ tsporegano
1 tspbasil
½ tspground fennel seed
25 ounceSan Marzano whole tomatoes
hand crushed
1 tspsalt
2 Tbsred wine
1 Tbsred wine vinegar
½ tspred pepper flakes
2 Tbssugar
2 CupsWater
For long simmer time, Use more or less on judgment
Instructions
Step 1
Sautee onions and garlic in butter and olive oil
Step 2
Add tomato paste and cook 5 minutes until the paste deepens in color
Step 3
Add marjoram, oregano, basil, and fennel seed and cook 1 minute
Step 4
Add tomatoes (hand crushed) and remaining ingredients
Step 5
Simmer for 3 hours (or longer) to help reduce acidity
Step 6
Add water during simmering to keep sauce from reducing too much and getting dried out.
Step 7
Immersion blend if desired for a smoother sauce.
