Step 1
Get the Yeast Active:
Combine the sugar, warm water, and warm milk in a large mixing bowl. After adding the yeast to the liquid, let it sit for five to ten minutes until it foams.

To make the batter:
Combine the yeast mixture with the flour and salt. Whisk until lump-free and smooth. For one hour, or when the batter has doubled in size and turned bubbling, cover the bowl with a fresh kitchen towel and leave it in a warm location.
Step 3
Prepare the Pan:
Apply oil or butter to the frying pan and crumpet rings while the batter is resting. Set the pan's temperature to medium-low.
Step 4
Add Baking Soda:
After the batter has had time to rest, stir in 1-2 teaspoons of warm water to dissolve the baking soda. This will contribute to the creation of those distinctive crumpet holes.
Step 5
Cook the Crumpets:
Put the crumpet rings in the pan after they have been oiled. Fill each ring with approximately 1/4 cup of batter. Cook over medium-low heat for 5 to 7 minutes, or until the tops are set and dotted with holes. Wait until the tops of the crumpets are dry before turning them over.
Step 6
Flip and Continue Cooking:
Gently take off the rings, turn the crumpets over, and cook for a further one to two minutes, or until the tops are just beginning to brown.
Step 7
To serve warm:
Take the crumpets out of the pan and place them on a wire rack to cool somewhat. Warm up and serve with jam, butter, or your preferred toppings.
