Instructions

Step 1
Bring butter to room temperature ( sbout 1 hour). ( if needed, you can heat water for 5 minutes in a microwave safe glass dish. Pour out water and cover butter on a plate until soft. Flip butter and repeat until both sides are soft)
Step 2
Preheat the oven to 350F. Line a baking sheet with parchment paper.
Step 3
Before starting the recipe, soak the raisins in water for 15 minutes until they are plump. After that, drain the water and pat them dry using a paper towel

In a large bowl, use mixer on low to cream together the butter and the sugars until mixture is smooth, light, and fluffy
Step 5
Beat in the eggs one at a time, followed by the vanilla extract (optional: 1 tablespoon dark molasses)
Step 6
In a medium bowl, whisk together the flour, baking soda, baking powder and salt. (optional 1 tsp of cinnamon)
Step 7
Gradually blend the flour mixture into butter mixture by hand. Mix until just combined. Do not overmix
Step 8
Fold in the oats and dried fruits (dough will be thick)
Step 9
Let mixture sit in the refridgerator for 30 minutes (or overnight)
Step 10
Drop 2 tablespoons of dough onto the cookie sheet, placing about 1 1/2 inches apart so they have room to spread.
Step 11
Bake at 350F for 10-13 minutes, until cookies are just golden brown at the edges.
Step 12
Cool on baking sheet for at least 5 minutes before transferring to a wire rack to cool completely.
