400 gramssugar

10 gramsbaking powder

260 gramscake flour

10 gramsbaking soda

5.2 gramscinnamon

4eggs

1 cupraisins

488 gramscrushed pineapple

1 cupvegetable oil

335 gramscarrots
shredded

1 cupwalnuts
Cream Cheese Frosting
Instructions
Prep
Step 1
Drain pineapple.

Step 2
Chop walnuts.

Step 3
Hand grate carrot.

Step 4
Preheat oven to 350.
Step 5
Soften butter and cream cheese.


Cake
Step 6
Combine baking powder, flour, cinnamon, and baking soda in a bowl.




Step 7
Stir in carrot and crushed pineapple to dry ingredients until coated.


Step 8
Stir eggs and sugar until blended. Drizzle in oil.



Step 9
Lightly stir wet ingredients into dry until blended.
Step 10
Gently stir in raisins and walnuts.


Step 11
Split into two greased 9" cake pans.
Step 12
Bake at 350 for 45 minutes.

Reduce heat to 325 and continue to bake until the internal temperature is between 205-210 degrees. (Measure temperature half way between the middle and center of the pan.)
Frosting
Step 14
Mix cream cheese and butter until smooth.


Step 15
Mix in powdered sugar and vanilla until throughout integrated.
Step 16
Chill frosting for 5-10 minutes.
Step 17
Spread on cooled cake.
