White Chocolate and Raspberry Energy Balls

Soak the dates in hot water in a bowl for about 10 minutes. Do the same for the cashews in a separate bowl. Add all the ingredients to a food processor - except the chia seeds, raspberries and white chocolate - and mix until smooth. Then add the remaining three ingredients. Roll into balls (about 28g each for mini bites) and store in an airtight container in the fridge. Best eaten chilled!
