Instructions

Step 1
Start by lining your 3lb loaf tin with parchment paper, ensuring it fits snugly. This will help the cake release easily once baked. Preheat your oven to 180°C (160°C fan)/350°F.
Step 2
In a small mixing bowl, combine the diced apples, granulated sugar, and cinnamon. Toss until the apples are evenly coated. Set this aside while you prepare the cake batter.
Step 3
In a small bowl or ramekin, combine the sugar and cinnamon with a spoon until evenly combined.
Step 4
Using an electric mixer, cream together the softened butter and granulated sugar until light and fluffy. Next, beat in the eggs, followed by the vanilla extract.
Step 5
Add in the self-raising flour and fold this in with a rubber spatula, then carefully pour in the milk, mixing until just combined. Be careful not to overmix, as this can affect the texture of the cake.
Step 6
Pour half of the batter into the prepared loaf tin and spread it out evenly. Layer half of the apple mixture on top, followed by half of the cinnamon sugar.
Step 7
Repeat this process with the remaining batter, apples, and cinnamon sugar.
Step 8
Place the loaf tin in the preheated oven and bake for 50–60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Avoid overbaking, as this can dry out the cake.
Step 9
Once the cake is baked, let it cool in the tin for about 30 minutes before removing it. While it’s still slightly warm, prepare the glaze by mixing the icing sugar with milk until smooth.
Step 10
Drizzle the glaze over the top of the cake, allowing it to drip down the sides. You can add the glaze while the cake is warm or wait until it has fully cooled—it’s delicious either way!
