Instructions
Step 1
Pat chuck roast dry. Season on all sides with salt, pepper, onion powder, and garlic powder. Put into crock pot.
Step 2
Wash and dry potatoes. Cut into cubes. Put into crock pot.
Step 3
Add carrots to crock pot.
Step 4
Mix beef broth, chicken broth, onion soup mix, and garlic in a bowl. Pour over vegetables and meat in crock pot.
Step 5
Cook on high for 5-6 hours OR on medium for 8-10 hours.
Step 6
Remove meat, potatoes, and carrots from crock pot and set aside.
Step 7
Pour liquid into a fat separator, put in freezer for 20-30 minutes to cool and separate.
Step 8
Put meat and veggies back into crock pot on "keep warm" while working on gravy.
Step 9
Separate fat from broth. Put fat into pot and set broth aside.
Step 10
Use flour and fat to make a roux for gravy.
Step 11
Add broth into roux and mix together slowly until fully mixed. Bring to boil and thicken.
Step 12
Add season salt, badia, and pepper to taste.
