Wash the strawberries

Dry the strawberries with a tea towel. Cut off the leaves, then place each strawberry cut side down on a chopping board and cut them in wedges. I cut the larger ones in 6 and the smaller ones in 4.

As you cut the strawberries, add the wedges to the jar. Once all are in, give the jar a quick shake and place it in a dark cool place for 40 days. Give it a quick shake once a week.

Once the 40 days have passed, filter the flavoured vodka into a 1L bottle.

Optional: if you are brave, you can eat the boozy strawberries (don’t eat too many, it’s potent stuff... will grow hair on your chest 😜). You can also put them in a sterylised jar, add a squirt of the liquor for colour, fill the jar with warm simple syrup (you'll need to make a bit more in the next step), and close the lid. Let it cool down upside down so the little air in the jar compresses and makes a tight seal.

Once cooled, add the syrup to the bottle, put in a stopper, mix and rest it in a dark cool place for at least a week.
