3 Ingredient Sugar Free Fudge
8 steps
Prep:10min
Fudge made simple and healthy! With just 3 ingredients, a microwave, and a few minutes of time, you can whip up this easy dessert for a crowd. The unsweetened chocolate and peanut butter are full of healthy fats and fiber, and the lack of added sugar prevents blood sugar spikes and energy crashes. A higher fat and lower carb snack is a great way to keep you feeling satiated throughout the day

Instructions
Step 1
Line a small airtight container with parchment paper. Mine are about 6" x 4"
Step 2
Break your chocolate into chunks, and add to a medium microwave safe bowl. Microwave in 20 second intervals, stirring in between, until just fully melted, about 1.5 minutes total

Step 3
You can also replace the 100% chocolate bar with 1/4 cup (56 g) melted coconut oil and 11 tbsp (56 g) cocoa powder
Step 4

Add the peanut butter and sugar free syrup to the melted chocolate, and stir with a silicone spatula until fully combined

Step 5
I've gone with peanut butter here, but almond butter, cashew butter, tahini, or any other nut/seed butter will totally work
Step 6

Spread the fudge batter into your container. Optionally top with flaky salt
Step 7

Cover with a lid, and freeze for 2 hours to harden
Step 8

Cut into 21 pieces, and store the fudge in the fridge
