Step 1

Prep your baking sheet with rectangles of melted butter where each pastry would go


Step 2

Dust each buttered spot with brown sugar and a pinch of cinnamon.


Step 3

Lay peach slices neatly over the sugar.

Step 4

Roll out your homemade puff pastry to about ⅛ inch thick. Cut pieces just big enough to cover the peaches.

Step 5

Place on top, trim edges, and seal gently with a fork.

Step 6

Brush some eggwash on each puff pastry rectangle


Step 7

Bake at 180°C (350°F) for 15–20 minutes, until puffed and golden.

Step 8

Carefully turn pastries upside down so the peaches are on top. Serve warm with a scoop of vanilla ice cream and a little extra cinnamon dusted over.
