Instructions
Step 1
Prepare a 9x13-inch pan by buttering it or lining it with parchment paper, leaving overhang for easy removal. Lightly grease the parchment.
Step 2
Combine butter, brown sugar, condensed milk, corn syrup, and salt in a heavy-bottomed saucepan over medium heat. Stir constantly as the butter melts and the mixture becomes smooth.
Step 3
Increase the heat slightly and bring the mixture to a gentle boil, stirring frequently. Attach a candy thermometer to the pan, ensuring it doesn’t touch the bottom.
Step 4
Continue cooking and stirring until the mixture reaches 235–240°F (112–116°C) or soft-ball stage. Alternatively, drop a small amount into cold water; it should form a pliable ball that flattens when pressed.
Step 5
Once the caramel reaches the desired temperature, hold it there for 2 additional minutes, stirring constantly, to ensure the perfect chewy texture.
Step 6
Remove from heat and quickly stir in the vanilla extract. Pour the caramel into the prepared pan, spreading it evenly if needed. Let it cool completely at room temperature.
Step 7
Once the caramel is firm, lift it out of the pan using the parchment overhang. Cut into squares with a buttered knife or kitchen scissors. Wrap each piece in waxed paper or cellophane.
Step 8
For a gourmet touch, sprinkle flaky sea salt on top of the caramel before it fully cools. Store in an airtight container at room temperature.
