Instructions

Step 1
Activate the yeast by combining warm milk, 1 tbsp sugar, and yeast. Stir and let sit for 5-7 minutes.
Step 2
In a large bowl, whisk together the flour and salt.
Step 3
Mix activated yeast with remaining sugar, Greek yogurt or sour cream, butter, eggs, vanilla, and flour mixture using a stand mixer on low speed for 1 minute, then let rest for 5 minutes.
Step 4
Mix on medium speed for 5-7 minutes until dough is smooth. Add more flour if needed.
Step 5
Transfer dough to a greased bowl, cover, and let rise in a warm place until doubled, about 30-45 minutes.
Step 6
Prepare cinnamon filling by mixing butter, brown sugar, cinnamon, and vanilla.
Step 7
Grease a 9x13” baking pan with butter.
Step 8
Roll out dough, spread filling, and roll tightly. Cut into 8 large or 12 small rolls.
Step 9
Place rolls in prepared pan, cover, and let proof for 25-30 minutes.
Step 10
Preheat oven to 350F.
Step 11
Once proofed, bake rolls in the preheated oven until golden brown.
