Instructions
Preparing the Beans
Step 1
Put the beans in a large pot and fill well past the top. Cover and allow to soak overnight. Add more water if necessary.
Step 2
Drain and refill the pot next morning. Add baking soda and bring to a simmer uncovered on the stove.
Step 3
Simmer for 20 minutes. Remove from the heat, cover, and let sit for 1 hour.
Preparing Sauce and Ingredients

Add 2 cups of cold water to a large measuring cup.
Step 5
Add your sugar, molasses, and spices to the water and stir until mixed.
Step 6
Cut bacon and onions, set aside.
Step 7
Prepare your ceramic pot or dutch oven by placing on an aluminum foil-lined baking sheet.
Cooking
Step 8
Preheat the oven for 400°F.
Step 9
Drain the beans or use a sieve and fill the ceramic pot halfway with beans. Add a layer of onion/powder and some bacon. And half of your sauce. Repeat for the other half. Save some onion and bacon for the top.
Step 10
Top up with cold water or water from the boiled beans until all beans are covered. You may need to do this again while cooking to ensure they are always in liquid.
Step 11
Place on a rack near the bottom and bake for 6 hours. Test and leave up to 8 hours if not done.
