Chimichurri steak with sweet potato mash

Instructions

Step 1
1. Boil sweet potato cubes in salted water 12-15 minutes until very soft.

• 2. Pat steak dry and season heavily with salt & pepper. Sear in a hot pan with a little oil 2-3 min per side for medium-rare. Add a dab of butter at the end and baste for flavor. Rest 5 minutes before slicing.

• 3. Mix parsley, oregano, garlic, olive oil, vinegar, chili flakes, salt & pepper in a small bowl. Adjust acidity or salt to taste.
