Instructions

Step 1
Prepare the crust by crushing Digestive biscuits and mixing with melted butter.
Step 2
Press the biscuit mixture into the base of a springform pan.
Step 3
Beat cream cheese, double cream, and icing sugar together until smooth.
Step 4
Add a splash of lemon juice for added flavor if desired.
Step 5
Pour filling over the crust, smoothing the top.
Step 6
Chill in refrigerator for at least 4 hours before serving.
