Instructions

Step 1
Melt the caramels and cream together in a double boiler (or a metal bowl set over a pot of simmering water), stirring frequently until the mixture is smooth.
Step 2
Whisk in the mascarpone cheese until the mixture is smoothly blended.
Step 3
Season with sea salt to taste and remove from the heat.
Step 4
Transfer the fondue to a fondue pot and keep warm over low heat.
Step 5
Serve immediately with the assorted dippers, and chocolate sauce if desired.
