Instructions

Step 1
Roast the tomatillos under the broiler on high until their skin blisters but isn’t too burned Let cool while prepping other ingredients Blend or use a food processor fitted with the S blade. Add the cucumber, cilantro, and lime juice (and jalapeños) and process again. Add seasonings and water and process once more. Strain through a fine mesh strainer. Add alcohol to taste and enjoy over ice! The strained pulp makes a decent salsa verde and you can add finely diced shallot and roasted garlic to it at that point to make it more salsa-y. Warnings: Do not use onions or garlic in the bloody mixture. They overpower the flavor and detract from the vibrant freshness for the drink flavor. Make sure to roast the fresh tomatillos first or you’ll be in for a full “cleanse” that lasts for days. Substitute canned tomatillos if you like. If using canned, you can skip the roasting step. Some people use finely chopped celery in place of the cucumber, or you can try a mix of both.
