Instructions
Step 1
Preheat muffin pan to 425F. Coat a 12 count muffin pan with cooking spray. Place 1 1/2 tsp sugar in each cup, turning the pan to coat all sides of the cup.
Step 2
In a food processor, pulse graham crackers to a fine crumb. In a medium bowl, melt 4 tbsp butter in the microwave. Add 2 tbsp of sugar and then Grahame crackers. Mix thoroughly.
Step 3
Divide the mixture evenly between the cups. Press down firmly.
Step 4
In a large microwave safe bowl, melt the chocolate chips and 1/2 cup of butter in 30 sec increments until melted and smooth.
Step 5
In a small bowl, whisk the eggs and yolks together. Add remaining sugar and flour, stirring until fully combined. Add the chocolate mixture, whisking continuously. Divide between the muffin cups.
Step 6
Bake for 7 minutes, or until the edges are just set. Turn the oven to broil.
Step 7
Add 7 marshmallows to each cup. Brown the edges under the broiler for one minute. Allow to cool slightly, remove with a spoon and serve immediately.
