Ingredients

Dry Rub
3 Tbspbrown sugar
1 Tbspunsweetened cocoa powder
2 Tbspsmoked paprika
1 tspchili powder
¼ tspcayenne
1 Tbspgarlic powder
1 tsponion powder
1 tspsalt
1 tsppepper
2 lbspork ribs
1pineapple
top cut off and skin removed
Pineapple Glaze
Instructions
Step 1
Pat the ribs dry. Apply a very thin layer of yellow mustard or a splash of ChocZero sugar-free syrup as a "binder" to help the rub stick.
Step 2
Generously coat both sides of the ribs with the rub.
Step 3
After wrapping the ribs around the pineapple, use metal or soaked wooden skewers to keep them tight.
Step 4
place the "Swineapple" on the trivet with 1.5 cups of water or pineapple juice. Cook on High Pressure for 35 minutes followed by a 15-minute natural release.
Glaze and Broil
Step 5
Combine all ingredients in a small saucepan over medium heat. Reduce: Let it simmer for 10–15 minutes until it thickens and reduces by about one-third. Finish: After the ribs finish in the Instant Pot, brush this glaze generously over the meat and pineapple. Caramelize: Broil in the oven for 3–5 minutes until the allulose starts to bubble and turn dark brown.
