Instructions
Step 1
Preheat the oven (Gas Mark 4) and get a baking sheet ready.
Step 2
Mix together the dry ingredients: flour, baking powder, baking soda, and salt.
Step 3
In another bowl, mix together the sugars, banana puree, oil, and vanilla extract.
Step 4
Add the flour into the wet mixture and stir until almost all the dry spots are gone. Fold in the chopped dark chocolate until it’s mixed in.
Step 5
Scoop out a spoonful of dough about the size of a golf ball, place on the baking sheet, and sorta flatten the top a little with the back of your spoon. Keep going until you run out of dough.
Step 6
Bake until the bottoms are nice and golden, 12 to 15 minutes.
Step 7
Let the cookies cool on a wire rack for at least 10 minutes.
Step 8
* Banana puree: throw 2 ripe bananas in a food processor or blender and run that until they’re all smooth. You can use a potato masher, too.
Step 9
** Optional: add nuts if you’ve got some.
