Salmon bites with orzo

Instructions

Step 1
In a medium saucepan, melt 1 tablespoon butter over medium heat. Add the orzo and toast for about 2 minutes, stirring frequently until lightly golden and fragrant.
Step 2
Pour in the chicken broth or water and bring to a gentle boil. Reduce the heat and simmer for 8–10 minutes until the orzo becomes tender and most of the liquid is absorbed.
Step 3
Stir in the minced garlic, lemon juice, lemon zest, Parmesan cheese, remaining butter, salt, and black pepper. Mix until creamy and glossy, then cover and set aside.
Step 4
In a bowl, toss the salmon cubes with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
Step 5
Heat a large skillet over medium-high heat. Add the salmon bites and sear for 2–3 minutes per side until golden brown on the outside and tender inside.
Step 6
Drizzle the salmon with fresh lemon juice just before removing from the skillet.
Step 7
Spoon the creamy lemon butter orzo onto serving plates and top with the juicy salmon bites. Garnish with fresh parsley and extra lemon zest if desired. Serve warm and buttery.
